Aging
and Bottling
Aging is a complex process which results in the formation
of a desirable bouquet and rich fruit flavors. Wines are
aged in French and American oak barrels for as little as
six months for some white wines, to over two years for
our best red wines. As the wine interacts with the barrel,
both aroma and flavor components begin to integrate, resulting
in a balanced, varietally correct product. Operations at
the bottling line include final clarification or filtration,
filling, corking, labeling and repacking the filled bottles
into case shippers.
